Originally, I intended to bake a pure white fruit cake made with eggs. Later, however, I opted for the eggless option. The cake isn’t as white as I wanted because I soaked the dried fruits in dark rum. However, if you soak them in clean rum, it would be whiter. But who cares about its appearance? This cake tastes incredible. It had a soft, fruity character and was highly aromatic. I loved how perfectly it came together.
As a substitute for eggs, the cake uses condensed milk, which proved to be very effective.
How to Make White Fruit Cake (Egg Free)
- 1. Prepare the oven by setting it to 180 degrees Celsius (350 degrees Fahrenheit). Line a loaf pan with parchment paper and keep it aside.
2. In a bowl, combine butter, oil, sugar and vanilla and whisk thoroughly.
3. Add condensed milk and mix well.
4. Incorporate baking soda, baking powder, and salt, then stir thoroughly.
5. Sprinkle flour and fold gently.
6. Now, incorporate the soaked fruits and mix thoroughly.
7. Add milk and mix well.
8. Spoon this into the loaf pan, and if there is any leftover batter, pour it into muffin pans.
9. Cook this for 35 to 50 mins until a toothpick put in comes out clean.
10. If the cake darkens too quickly, cover it with a sheet of parchment and keep baking.
